Cannelloni stuffed with fish by Salerno

Ingredients for 6 people:

For the dough

Flour 300g

2 eggs

1 tablespoon of olive oil

water

salt.

For the filling

Codfish 300 gr

spinach 200g

butter 50g

Aurora sauce (see recipe)

grated Parmesan cheese 50 gr

nutmeg

salt and pepper.

 PREPARATION

On a pastry board put the flour, then add the eggs, and a pinch of salt. Begin to knead and add enough water to get a smooth and homogeneous dough then, create a ball with the dough and let rest, covered with a clean cloth for about 1 hour.

After this time, roll out the dough, with the aid of a rolling pin, until obtain a thin sheet from which you will cut some squares of about 12 cm per side.

Cook the pasta squares in a container with boiling water and 1 tablespoon of oil, then drain them and put them to dry on a towel.

Prepare the filling: clean codfish and boil only the pulp with spinach. Drain them and chop finely mixing fish and vegetables.

Prepare the Aurora sauce then sprinkle with salt, pepper and a pinch of nutmeg.

Place on each square of dough the filling of fish and vegetables that have previously blended with 2/3 of sauce Aurora then wrap the dough and create the cannelloni which will settle, side by side, in a baking dish greased with butter.

Sprinkle with the remaining sauce Aurora, sprinkle with grated cheese and place in preheated oven to 180 ° C for 25 minutes.

Serve warm.
