300 g. of pea flour
the tip of 1 teaspoon of baking soda
1 pinch of turmeric
1 pinch of coriander seeds
Wash the vegetables and cut them into small pieces or, possibly, if you prefer, to slice. In a bowl mix the flour with the spices adding a pinch of salt. Gradually add warm water until you have a smooth batter and homogeneous.
Put to heat a pan with hot oil and, after soaked the vegetables in the batter, cook them until they become golden on all sides. Drain excess oil and let dry on paper towels. Serve hot.
