Ragù by Napoli

Ingredients For 6 people:

Pork 1.2kg

bacon salt 100g

ham 50 gr

sausages 300g

3 bottles of tomato sauce

tomato paste 50 g

onions 150 gr

extra virgin olive oil 150 gr

1 glass of red wine

basil

coarse salt.

PREPARATION

In a large pot (preferably earthenware) sauté the sliced ​​onion with the pieces of pork, bacon and ham; Once the onion is golden and the meat lightly browned, add the glass of red wine, place over high heat and let it evaporate. As soon as the wine will be consumed, add the tomato paste having to mix with a wooden spoon until it is completely melted and became very dark. Then put the tomato sauce with the addition of a couple of ladles of water, then reduce the heat to low, add salt, cover and simmer for at least 4 hours before turning off checking that the meat is cooked. Once prepared the sauce, in a saucepan, cook the sausages with oil and a bit 'of wine riddle to release the fat that, when cooked, you will add to the sauce.
